Shown below is the method, steps and ingredients for making Curried Mushroom Chicken as cooked in Barbados.

Ingredients

» 4 pieces of chicken (legs or breasts)
» 1 can cream of mushroom soup
» 1 desert spoon curry powder

Method

» Lay chicken pieces in pyrex dish and sprinkle with salt.   
» Mix soup and curry powder and pour over chicken.   
» Bake 375º for 1 hour.   

(The chicken will spring it’s own juices and blend with the soup to make a creamy curry sauce.)

I made this recipe yesterday for my bajan born husband. It was a huge hit !!
I used boneless skinless chicken breasts and I made a side dish of rice, peas , carroys , mushrooms and onions and used the mushroom cirry sauce to pour over the rice as well...it was amazing !
I guess I will be making this several more times in the days ahead !
