- 2 cups pumpkin
- 2 eggs
- 2 cups of milk
- 1 tsp. salt
- 2 tsp. cinnamon
- ½ tsp. allspice
- ½ tsp. ginger
- 1 cup icing sugar
Method
- Line a pie dish with the pastry.
- Mix pumpkin with milk and sugar, beaten egg, salt, spices, and beat for 2 – 3 minutes.
- Pour into pie and place in a hot oven for 15 minutes, then reduce heat and bake for 45 minutes at 350 degrees.
