Ingredients

— 2 cups flaked fish
— 4 eggs
— 4 slices hot buttered toast
— 2 tbsp. milk
— 4 tbsp. butter or fat
— A little mustard
— Salt and pepper to taste

Method

— Beat the eggs slightly, just enough to mix yolks and whites. Season with salt, pepper, and mustard if liked.

— Add the milk and then the flaked fish.

— Melt the butter in a strong saucepan, and meanwhile, make the toast.

— Put the fish mixture into the hot butter and stir gently until the mixture thickens.

— Butter the toast and pile the scrambled fish on top.

— Serves 4
