— 1lb. Chicken livers
— 1/2lb fat bacon pieces
— 1 Clove garlic
— Large onion
— 2 tsp. dry mustard
— Salt and pepper
— 1 tbsp. sherry or brandy
— Clean livers of sinews and gall.
— Put into fireproof casserole with all other ingredients roughly chopped.
— Season and just cover with milk.
— Put lid on casserole and cook in slow oven (300ºF) for 2 hours
— Liquidize in blender.
— Adjust seasoning.
— Add sherry or brandy.
— Put in dish and cover with melted butter.
