Chicken Liver Pate Recipe

Below are the method, steps, and ingredients for making Chicken Liver Pate as cooked in Barbados.


  • 1lb. Chicken livers
  • 1/2lb fat bacon pieces
  • 1 Clove garlic
  • Large onion
  • 2 tsp. dry mustard
  • Salt and pepper
  • Milk
  • 1 tbsp. sherry or brandy


  1. Clean livers of sinews and gall.
  2. Put into a fireproof casserole with all other ingredients roughly chopped.
  3. Season and cover with milk.
  4. Put the lid on the casserole and cook in a slow oven (300ºF) for 2 hours.
  5. Liquidize in a blender.
  6. Adjust seasoning.
  7. Add sherry or brandy.
  8. Put in a dish and cover with melted butter.
